Gram’s homemade blackberry ice cream

4 cups lightly smashed wild blackberry farms blackberries

1 cup granulated sugar

6 egg yolks

1-1/2 cups granulated sugar

1/4 teaspoon salt

1 tablespoon vanilla

1 cup whole milk

1 quart heavy whipping cream

mix 1 c. sugar and 4 c. blackberries together in bowl and refrigerate for 2-3 hours until sugar is absorbed into blackberries.

blend egg yolks, 1-1/2 cups sugar, salt, vanilla and whole milk in blender until well mixed. place blended mixture in saucepan and heat on low until just before boiling point. stir constantly once the mixture begins to steam to avoid scorching. remove pan from heat and cool completely. once cool, stir in 1 quart heavy whipping cream. place mixture in 1 gallon ice cream canister. stir in berry and sugar mixture. add additional whole milk, if needed to reach the “fill line” in the ice cream canister. Close canister and place in ice cream freezer bucket. fill ice cream freezer bucket with layers of ice and rock salt until full. run ice cream freezer for approximately 45 minutes (depending on brand of ice cream freezer). add additional ice and rock salt as needed until freezing is complete.

4 cups smashed Wild Blackberry Farms blackberries

2/3 cup white sugar

2 tablespoons freezer pectin

CRush blackberries one layer at a time until you have 1-2/3 cups of crushed fruit. stir 2/3 c. sugar and 2 T. freezer pectin into a bowl. add smashed blackberries and hand stir for approximately 3 minutes. Ladle mixture into freezer containers, seal and let stand for 30 minutes before putting into freezer. each batch makes two 8 oz. jars of jam.

wild Blackberry S’mores

1/2 cup lightly smashed wild blackberry farms blackberries

8 squares of white chocolate (from a 4-oz white chocolate bar)

16 graham crackers

melted butter for brushing

8 large marshmallows

makes 8 s’mores….Preheat broiler. Brush both sides of graham crackers with melted butter. Place in a single layer on a microwave-safe plate and lay a square of white chocolate on one graham cracker. Microwave about 30-45 seconds, or until the white chocolate is beginning to soften and melt. Don't microwave too long or graham cracker will burn.

Transfer graham cracker with white chocolate to a baking dish or cookie sheet and place a marshmallow on top of the white chocolate.

Place under broiler for approximately 90 seconds to 2 minutes. watch carefully and remove when marshmallow puffs up and begins to brown. don't let over-brown or your graham cracker will suffer! If you prefer your marshmallow a bit more toasted, use a kitchen torch to brown the edge.

Spoon smashed blackberries onto top of toasted marshmallow and top with remaining graham cracker.

Serve immediately.
